Off Color Brewing, located at 3925 W. Dickens Ave. in Chicago's Logan Square neighborhood, is a production brewery specializing in reviving historic beer styles. Founded in 2013 by John Laffler and Dave Bleitner, both alumni of the Siebel Institute of Technology, the brewery focuses on styles that predate the Reinheitsgebot, Germany's beer purity law. Their lineup includes "Tooth & Claw," a dry-hopped lager, "Beer for Tacos," a gose with lime and coriander, and "Apex Predator," a farmhouse ale. While the brewery doesn't have a public taproom, their beers are available at their Lincoln Park location, Mousetrap, at 1460 N. Kingsbury.
