    Bisous is a 1960s Parisian-inspired cocktail bar in Chicago's Fulton Market district. Opened in early 2024, it quickly became a neighborhood favorite, even earning a spot on the 2025 North America's 50 Best Bars list. The intimate space features a marble bar, velvet booths, and patterned wallpaper, creating a romantic ambiance. The menu boasts a variety of martinis, including the Olivette, made with olive leaf-infused gin, vermouth, and saline solution. Small plates like marinated Manchego and olives complement the drinks. Bisous is a sister bar to Sparrow Chicago.
