Founded by Scottish native Graeme Wallace in 2016, the distillery utilizes a 1,300-gallon copper pot still from Scotland to produce smooth, complex spirits. Their lineup includes the Peat Smoked American Single Malt Whisky, made from 100% Scottish-grown barley and aged in virgin oak casks, and the Rich Roast American Single Malt Whisky, featuring lightly kilned Minnesota barley aged in American oak. Visitors can sample these offerings at their Boulder location, with tours available by appointment. For a more immersive experience, the Wallace Malt Room in Lafayette provides an intimate setting to savor single cask, cask-strength releases.
